結(jié)構(gòu)：真空和面機(jī)主要由機(jī)體、機(jī)架、面箱、面箱蓋、面箱旋轉(zhuǎn)油缸、開關(guān)蓋油缸、傳動(dòng)部分、真空部分、電控部分、液壓系統(tǒng)等組成。

特點(diǎn)：

The characteristics of:

1．面箱蓋的開啟和面箱的傾斜采用液壓系統(tǒng)控制。

2．抽真空采用水環(huán)式真空泵，可減少對面粉的污染，有效防止面粉對真空泵造成的損壞，更加耐用，最高真空度可達(dá)到-0.09Mpa。

和面原理：真空和面機(jī)是在0～-0.09MPa負(fù)壓真空狀態(tài)下，使一部分水氣霧化，使面粉顆粒吸收水分的同步率提高，面筋形成后，在和面槳葉的作用下模擬手工和面的原理，使面筋網(wǎng)絡(luò)迅速形成。
